Can’t stop talking about it

 Since the opening of the new and improved Ridleys store, the ladies at work can’t stop talking about it. 
 I was at the grand opening as well and it is a very impressive store with lots of open aisles and very friendly staff. 
 The thing that has them most excited is the fresh made donuts that they have been missing for a couple of years. I got into work the other morning and asked about one of the employees, to see if she was sick, and they told me she was out getting fresh donuts.
 One of the girls at work is the wife of the bakery manager and she has been complaining about having to do all her husband’s chores because he is working so many hours at work. It is amazing that something as simple as a fresh donut will bring so much joy to people. Mary has been looking forward to a fresh apple fitter for months.
 I went into the new store the other day for some groceries for the candy shop and ran across some fresh peaches. 
 With Mary in mind, I thought why not see if there was a way to make a peach fritter. 
 A fritter is a fried pastry usually consisting of a portion of batter or breading which has been filled with bits of meat, seafood, fruit, vegetables or other ingredients. Fritters are prepared in both sweet and savory varieties. 
 Also, I thought I better brush up on my fritter skills because the zucchini has come in from the garden and Sharon keeps talking about the fritters I wrote about last year.
 This recipe is super simple and made about 14 small fritters. The peaches need to be firm and cut into small pieces.
Peach fritters
Ingredients
2 peaches peeled, cored, and cut into 1/4-inch pieces
2 cups all-purpose flour
1/3 cup brown sugar packed
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3/4 cup milk
2 large eggs beaten
2 tablespoons unsalted butter melted
1 teaspoon vanilla extract
Oil for frying
Glaze
2 cups confectioners’ sugar
1/4 cup peach nectar
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
Directions: 
 1. Spread prepared peaches in single layer on paper towel–lined baking sheet and pat thoroughly dry with paper towels.
 2. Combine flour, brown sugar, baking powder, salt, cinnamon, and nutmeg in large bowl.
 3. Whisk milk, eggs, melted butter, and vanilla extract in medium bowl until combined. Stir in peaches into flour mixture. Then add milk mixture into dry ingredients.
 4. Heat oil in Dutch oven over medium-high heat to 350 degrees. Use 1/3-cup measure to transfer 5 heaping portions of batter to oil. Press batter lightly with back of spoon to flatten. Fry, adjusting burner as necessary to maintain oil temperature between 325 and 350 degrees, until deep golden brown, 2 to 3 minutes per side. Transfer fritters to wire rack set inside rimmed baking sheet. Bring oil back to 350 degrees and repeat with remaining batter. Let fritters cool 5 minutes.
 5. Meanwhile, whisk confectioners’ sugar, nectar, cinnamon, and nutmeg in medium bowl until smooth. Top each fritter with 1 heaping tablespoon glaze. Let glaze set 10 minutes. Serve.
